Mimi's 21-Day Spring Cleaning Detox is here!

You may be asking... Why should I do a detox?

Our bodies are constantly exposed to toxins of all kinds from all directions, from the water we drink to the air we breathe. Over time these toxins get stored in the tissues and lead to toxic overload, making it difficult to ease otherwise minor health issues. Although our bodies are equipped with the natural ability to detox, the burden of our current environment makes this process more difficult for our bodies to do alone. A detox can be super effective in assisting the body in pushing things through and out!

How can a detox help?
  • Although this is not a weight-loss program, a detox can be a great launching pad for creating a new and healthier lifestyle to support your weight loss goals
  • Boost energy, vitality, clarity of mind -- get rid of those afternoon slumps!
  • Improve digestion and eliminate bloating
  • Improve sleep patterns
  • Eliminate sugar cravings
  • Put you on the path to better self-care practices making your life healthier & happier all around!

Why should I choose THIS detox?

Because I have done the research and experienced the program myself multiple times. This proprietary detoxification kit is a unique and advanced combination of nutrients, antioxidants, fiber, fruit and vegetable extracts, and pure herbs that support the overall metabolic detoxification process while balancing Phase I and Phase II detoxification pathways. Plus, you get my one on one support the whole way!

The theme of the shower was children's story books. All of the hosts were to make a dish and a display that accompanied a children's book that involved FOOD. So fun!! My daughter and I chose Ten Apples on Top and of course a healthy recipe to go along...

How cute was our display?! :)

Getting on the RIGHT track to health... this is your ticket! Choo-choo!!

If you pay any attention to the world of health and nutrition then you know how very confusing it can be out there. Should you be Paleo, vegetarian, vegan? Should you juice? What is a plant based diet? Why is everyone so afraid of gluten these days - hasn't it been around forever? Where do you even begin to determine what will work for you to get you on the right track to optimal health?! Do you have to starve and restrict yourself in order to reach your goals? Absolutely not!

I was a vegetarian for about 12 years. I've been Paleo off and on for a couple of years. I just try to do the best that I can and eat what makes me feel good - and it's never difficult. With everything I've learned over the past few years, I know that different people have different nutritional needs at different times in their lives. We are all different bodies with different compositions and different genetics. If you get in tune with your body, you'll learn what those needs are and be able to eat and supplement in a way that optimizes your health. It might sound complicated at first, but it's actually quite simple.

Generally speaking, I think that you should be cautious of any diet that is monopolizing from a name. Do your own research and become your own advocate. I believe the most important principle that WE ALL need to follow is to JUST EAT REAL FOOD. Allow me to simplify some of the basics...
  • Moderation is always key.
  • Fast food has an extra 's' in it ;)
  • Processed 'foods' are not food.
  • Organic is best - check the Clean 15 and the Dirty Dozen for the best produce buying guides.
  • GMO's are bad - watch GMO OMG - educate yourself and do what you can.
  • Hormones, additives, preservatives & artificial sweeteners are poisons that should be avoided as much as possible.
  • Refined sugars and carbs should be minimized.
  • Some fats are good for you! "Fat free" is usually not.
  • Certain foods and deficiencies can lead to inflammation and disease. If you're having health issues, learn what those are for you by talking to your doctor, running blood tests and determining food allergies.
  • Educate yourself on the ethical treatment of animals and conscious meat-eating. This is a touchy area, but I believe that we can all live and eat in a conscious and healthy way here.
  • Eating fresh vegetables at every meal can greatly improve your health! This is a simple step everyone can take in the right direction!
I could go on and on with this list, but this covers a wide spectrum. The biggest question then arises around going gluten free (or Paleo, which is also grain free). Is this another trend? Certainly the name is, but the principle takes us back to basic eating. And I'm certainly convinced that in our food supply there are very little grains or gluten that are straight from a healthy, nutrient dense source of soil and/or not genetically modified. While you might think these foods have been around for centuries, what we're getting on our plates is not what the cavemen were gathering. Most of the foods on our grocery store shelves are being passed through too many hands, machines and chemicals to be called food anymore. Our bodies are unable to process them naturally and they don't provide the nutritional value that our bodies need.

I will always adhere to the simple fact that we ALL should be educating ourselves about what is going into our bodies. We can't count on the medical system to fix us once we've put our health on the back burner for too long. Here are some ways you can begin the process. These are some of my favorite resources, but I know there are a plethora of them out there. Do the work! :)

  • Become your own health advocate! Learn about natural eating and living and take on the practices and principals that work for you.
  • Find a doctor that supports natural and holistic health. These doctors adhere to getting to the root of the issues you're be dealing with rather than just treating the symptoms. These are the doctors that are willing to sit with you for longer than 5 minutes to determine all of the factors of your health with you.
  • Get in tune with your body by doing an elimination diet.
  • Get tested for food sensitivities (ask your doctor).

If you have any questions, send me a message! I'm passionate about supporting and empowering a naturally healthy lifestyle. And, if you're in the San Diego area, let's see how we can work together! I'd love to help you! :)

Yours in health,
~Mimi~

And they call this FOOD?

Ok well, I think I've made my point and I can finally throw this in the trash where it belongs!

I've seen a lot of posts on this same exact experiment over the years, but I really wanted to see for myself if it was real. So, I bought this hamburger from McD's in March 2013 to run my own test. All I bought was a plain hamburger on a bun. I sat it next to an orange because I knew the orange would last a long time before it actually rotted. I sat it on an open pie dish in my garage and let it be.

March 3rd, 2013

It sat and sat and sat... as time passed people poked and prodded with curiosity... through spring... summer... winter... all the temperature changes and the high heat that happens in most people's garage...

I threw the orange away months after this because it was attracting gnats, but forgot to pay attention to how long ago that was. At any rate, you'll get the point...

June 18, 2014 - one year and three months later

The only thing that slightly changed was the size. The top bun didn't make it through the poking, prodding and banging around because people and kids were so curious. Otherwise, I assure you nothing was preserved or tampered with. It reminds me of the fake food toys my daughter used to have in her play kitchen.

And they call this FOOD? Not in my book!

Yours in health,
~Mimi~

Kale Soup!

Holy kale! It has been a long time since I've posted any recipes for you all, so I hope this is a great ice breaker for the posts that are to come! Enjoy and let me know if you have any questions!

Ingredients:
1 large head of kale, washed and ripped into pieces
1/2 head chopped green cabbage
5-8 sliced celery sticks
1 quart organic vegetable broth
1.5 quarts filtered water
Juice of 1 lemon
3-4 tbsp. coconut oil
1 tbsp soy or teriyaki sauce
Fresh herbs from my garden (use yours of choice): chives, rosemary, basil & oregano
3-7 cloves minced garlic
1 tsp red pepper paste
Ginger powder
Salt & pepper to taste

Directions:
Saute celery, garlic & herbs in coconut oil.
Add the remaining ingredients. Kale may need to cook down, but everything should eventually be submerged in broth.
Once everything is submerged, simmer on medium-high for about 30-60 minutes, or until the veggies are to desired softness.

Serve with rice, quinoa or by itself.

ENJOY!! :)

Cauliflower crusted pizza - first attempt - scored!!

Ok, so maybe it wasn't perfect, but it was pretty dang close.. because well, come on, THE KIDS LIKED IT!! And especially for Eddie, that's saying A LOT. His absolute FAVORITE food is pizza and he has really missed it since going Paleo. I'm so happy to find some pizza that he can eat again - happy kids, happy mom!! :)

It's funny because my cooking almost always comes out the best when it's not planned or measured. So, I'll give you my best shot at sharing what I did tonight. If you try it, please let me know how it works out for you!

I'd also like to add, that our *official* Paleo Cooking at Home program is over. Tomorrow Eddie has an appointment with our family osteopath and we will be discussing diet further with her. There are definitely some things we'll be keeping around, such as some meats.. and then of course we'll still indulge in our occasional "treats."

All in all, I have been extremely pleased with where our Paleo venture has taken us. I think all of us have benefited from it in some way or another. It has taken me back into the kitchen and I am going to be sharing lots more of my ventures in food with you again. It is something I have truly missed over the past year and where my passion truly lies.

So, here's that crazy crust I threw together! :)

Cauliflower Crusted Pizza

1 small head of cauliflower, blended in a food processor or Vitamix.
1/4 C whole flax seeds
1/4 C coconut flour
(you can use your own choices of flours: flax, almond, coconut, etc.)
1/8 C or less nutritional yeast
3 eggs
3 oz. tomato paste (optional)
2-3 tbsp. coconut oil
Salt & pepper

Mix all ingredients together. It will have a thick, pasty texture.

Coat cooking sheet with plenty of coconut oil and spread the mixture thinly and evenly on pan.

Cook the crust by itself at 400* for about 20 minutes, until it begins to brown.

Take out and top with homemade pizza sauce and your favorite toppings. I was working with limited options tonight because I need to go shopping. I used a cheese blend because it was all I had, but I prefer shredding my own mozzarella.

Bake again at 400* for about 10-15 minutes.

Because this isn't your typical pizza dough, you might not be able to pick it up with your hands to eat it. It just depends on your toppings, your cooking sheet and how your oven cooks it. Either way, you should be able to serve easily with a spatula and ENJOY!! :)

Pachecos Go Paleo!!

I'm SO excited to share with you all this brand new Paleo journey that I'm taking my family on for the next 2 weeks!! I will be posting blogs, videos and pictures on FB and IG through all of my social media feeds and I would love for you to follow along. Bare with me, as this first post will be the longest as I tell you a little bit of our story as well as WHY we've decided to give this path a try.

If you know me, you know that I generally don't believe in "diets" or the idea that "one-size-fits-all" when it comes to what we should be eating. Every body has its own requirements and it's our job to figure out what foods provide us with the energy and vitality that are needed to live our fullest, healthiest life possible.

You may or may not know that I've been mostly vegetarian for the past 13 years. Sometimes I'm very strict about it, sometimes I'm not. I typically just go with how I feel because I deeply believe that our bodies will unfailingly tell us what we need through our levels of energy, how we're feeling, what we're craving, etc.

Sadly though, over the past 6+ months I lost my passion for being in the kitchen. Life got super busy and cooking (something that I truly love to do) became more of a chore than something that I enjoyed. I also got tired of making the same old things that never pleased the whole family (3 adults and 3 kids). So, I began to settle for less on what I was feeding everyone. I'd make separate meals which usually meant something healthier for the adults and something mediocre for the kids. Lately, it really started to get to me. My #1 commitment in life is to give my family the best in everything that I can, so how was I going to get over this major funk in the kitchen?

And then I no longer had a choice. I wasn't sure if I was going to share this next part of our story publicly or not, but one thing I know is that by sharing the REAL stuff in life then others can benefit in their own struggles. It is my hope that in sharing this part of our family's journey that you will gain something for your own life journey.

Last week we found out that our 8 year old son, Eddie, has Complex Partial Epilepsy. You may have followed some of his story over the past 8 years. His issues have been pretty minor and very manageable. However, more recently we began noticing something a little more concerning - periods of complete absence, loss of memory and/or knowledge of his current setting. (We'll keep this part of the story short for now.) And so the tests began (physicals, EEG, MRI, etc.) and our suspicions were confirmed.

Once the devastation settled, reality set in. Something had to change. I knew deep in my being that the kid who would eat pizza at every single meal if he could, had to change his diet. And that meant this mama was going to have to have a solid plan. Whatever the plan was going to be, it needed to include the entire family.

[Parts of our family meeting will be posted on Youtube.]

After conducting much of my own homework as well as already having some intuition telling me that Eddie needed to be eating more meat, I reluctantly decided it was time to start bringing more meat into the house. After a few very DRY and not-so-yummy attempts (I've never been one to cook meat), the first person I could think to help me on this path was my amazingly talented and passion-about-food friend, Camille from Recipe RX and Paleo Living.

It couldn't have been more perfect that she was literally JUST launching her own program to help people transition into a healthier lifestyle, called Paleo Cooking at Home: Fast, Easy & Cheap. I quickly jumped on her affiliate program last week, went shopping on Sunday and began our cooking journey on Monday (yesterday). No time to waste!

>>>>>Meet Camille here!!<<<<<

And now the journey begins.

Sunday we completely overhauled the kitchen... out with the crap, in with the real food!!

OUT with the enriched breads, pastas & processed carbs~

IN with the fresh produce, healthy fats and yes, the meat!!

Our first dinner was last night (Almond Coconut Crusted Chicken - holy heavens!!) and EVERYONE (yes, I said everyone) LOVED it!! So far, we have made last night's dinner, today's breakfast (plantain crepes) and lunch (tuna salad wraps), and all of them have been a hit!!

Words cannot express how exciting it has been in just 24 hours to make meals that the whole family loves! I'm seriously ecstatic!! I'm already thrilled to be back in the kitchen and I feel like this is exactly what our entire family needed to get on track.

Be sure to follow our 2-week "Pachecos Go Paleo" journey on Facebook, Twitter, Instagram and now Youtube!!

Unveiling ~ Part One!

You may or may not have noticed a shift in gears around here lately. I'm sure your news feeds and inboxes are just as swamped as mine, so either way it can be hard to keep up! Definitely though, my articles has been more sporadic and my posts have broadened in topic from self-love to fitness to food. Over the past 2 years I have taken myself on a personal growth and development journey of a lifetime! A personal overhaul, if you will. I have gone through various workshops, seminars, leadership programs; and I have really stepped outside of my comfort zone to shed my past, develop a life that I love, and become a person that I love and that my family and friends can love more.

Got veggie protein?

I was so excited when All Pro Science contacted me to try their veggie based protein. As a vegetarian, the same old sources of protein powder can get quite boring. So, I researched their products along with all of the ingredients and I was in! I especially love their tag line: "All Natural. Nothing to Hide!" It's true.

I have to admit, I was still weary. Even though I already know and believe that we get plenty of what we need from what Mother Nature provides, I wasn't sure just how veggie protein could actually come out tasting good. And I was VERY pleasantly surprised!! I tried the french vanilla flavor and this was definitely better than any whey protein I've ever had. Smooth, creamy and pleasantly rich (not too rich) in flavor!

And then there was the super foods... these are sure to taste strange, right? ;) Nope! Only more delicious nutrition! These are a great addition to a quick smoothie on the go..

I highly recommend checking out All Pro Science - the All Natural Choice!

AND I'm super stoked to let you know that APS is offering my lovely followers a 30% discount using promo code: hh30

Let me know how you like it! :)

*I must note that I'm not a believer in replacing meals. I believe that we should feed our bodies with whole foods from the Earth as much as we possibly can. AND I do think that shakes and smoothies are a great choice for snacks and/or supplementation when we're on the go in our busy lives.

My 1-day Juice Fast

I really only wanted one thing for Christmas. A juicer.. And I got it and I'm super happy about it! I was so hyped to try a 3-day Reboot with Joe... And one day was enough for me! My purpose was that I wanted to cleanse my body of all the holiday crap and in my opinion, when you're already a healthy eater, a day is enough. I really don't see the need to put myself through a major loss of energy and the agitation that comes from being so hungry. Especially when I have so much to do and so many commitments. I need to be in tip-top form! :)

I believe that if you're already a person who eats a clean and healthy diet, then a one day juice fast periodically is beneficial, but not really necessary. I think it's good to give our bodies a break from all of the work it does to process everything that we put in it on a regular basis. Overall, I just think it's a great idea to add juice to your lifestyle.

I also believe in a spiritual aspect that allows us to connect with something within ourselves that is beyond the physical realm. I can imagine that is even more heightened if taken beyond one day. Food can be a beautiful experience and eating should be a thoughtful process. Juices are beautiful and I feel so fresh and vibrant when I drink them.. how can there be anything bad about that! ;)

I'm not a doctor or anything, but if you're under the care of one, I think juicing can be a great way to kickstart a healthy lifestyle. I think it can be beneficial in alleviating our body's addiction to all the crap we give it. AND I still don't think it's necessary for ANYONE to have to deprive themselves in order to lose weight and/or get healthy.

If you are considering doing a reboot, the biggest advice I can give is to be prepared. You're going to need A LOT of fruits and veggies. We had 3+ bags FULL for two of us and that was really only enough for 2 days. I also don't recommend doing any crazy workouts while you're fasting. You're probably not going to have the energy and probably won't feel very good when you're done.

At the end of the day, I say just add juice to your lifestyle and you'll experience the magic! ;)

Super size... your nutritious knowledge!

If there is one message I would always like to send in regard to diet, it is to gather your own knowledge to support your own decisions, beliefs and unique bodies, and then do what works for YOU. While I have been mostly vegetarian for the past 12 years, I definitely don't believe that one size fits all. Being vegetarian doesn't mean you just don't eat meat, and I've seen so many people do attempt to do it the wrong way. Sometimes they replace their meat with too much pasta; and others too much soy; and many say they just don't feel good without meat. There are just so many things to consider; so many ways to be "vegetarian," but it all starts with education!

In my own early years, I ate a lot of tofu because I just didn't know any better. Over time, I learned that there can be some adverse effects to eating/drinking too much soy (for starters: stripped magnesium and hormonal changes). And then most recently, I learned that a friend of mine (who chose to stay anonymous) has had her own experience with doing vegetarianism the wrong way. I really felt that her story could be shared in a way to encourage others to be their own health advocates. And I thank you, my friend, for being so generous with your story. :)

Following is my interview with my friend. Please comment below if you have any questions, or if this story has enlightened/inspired you in any way. Thank you for reading! ~Mimi~

People choose not to eat meat for a variety of reasons. What are/were your reasons for being vegetarian?

There were many reasons for becoming a vegetarian.  First, let me state that I grew up eating only chicken and turkey, with the occasional pepperoni pizza, so becoming a vegetarian was not a huge stretch.

My main reason for giving up meat completely was because I am a huge animal lover.   For some reason it never bothered me to eat chicken and turkey, probably because I had never really thought about it.  However, when I really thought about it, it made no sense to me to take another life in order to eat, especially in a day where there are grocery stores on every corner and many other food options.

This decision became even more clear after watching the documentary Forks Over Knives, where they show all of the damage that hormones in our meats and dairy can cause.  At this point I gave up meat and dairy completely.

How long have you been vegetarian?

I had been vegetarian for about three years.

What did your diet consist of? Explain what your typical meals looked like.

Unfortunately, when I decided to become a vegetarian, I did it all wrong.  I hadn't done enough research on the particular nutrients that vegetarians need to be aware of.  I also had no knowledge of portions, etc.

In the beginning I was eating cereal, veggie burgers, burritos, and stir fry.  That was about it.  Also, I was probably only consuming 500 calories a day.  I should note that I am a personal trainer and group instructor who is always on the go. At this point, I was also getting ready for my wedding and working out about 3 hours a day.  500 calories was definitely not enough.  However, I wasn't counting my calories.  I just thought that eating three meals a day was sufficient, not knowing that a veggie patty and a side salad was such a small amount of food.

I was also taking a multivitamin everyday.

How long were you eating that particular way?

I ate this way for probably about two years.

What symptoms did you begin experiencing?

After a few months of eating this way, I starting experiencing some weird symptoms-vaginal pain that seemed like the beginning of a UTI.  My vision was also blurry at some points, which I thought was maybe a sinus infection. In addition, I had awful headaches.

How long were you dealing with the symptoms?

I had these symptoms off and on for about two years.

At what point did you begin to relate your symptoms to your diet, or did you have any idea that what you were dealing with was related to what you were eating?

After about a month of having these symptoms, I went to visit the doctor.  I continued to visit the doctor almost monthly and had blood tests, pelvic exams, and urine tests.  They were unable to find anything wrong.  After awhile they sent me to a specialist.

The specialist was awful!  He looked at me like I was crazy and was quick to diagnose me with having an active bladder.  This was not the case, and I asked to see another specialist.  At this point, I met Rachel.

Rachel was the first person who ever questioned my diet! After finding out that I was vegetarian, she considered that I may have acidosis (where you are eating too much acidic food) and recommended seeing a nutritionist.  I went home and called my friend/nutritionist immediately.

The nutritionist explained a few things to me.  First, she thought that I was eating way too little (I hung up the phone with her and started eating EVERYTHING I could find!! To my amazement, my blurry vision cleared up).  She also thought that because I was eating so little, the multivitamin was sitting in my bladder and causing pain.  She also gave me a sample menu to try, eating more alkaline foods and more food in general.  The sample menu included whole grain toast, tofu, brown rice, oatmeal, veggies, and many more wonderful ingredients.  I was extremely grateful that she was able to help and I followed this meal plan for a few months.

After getting bored with eating the same meals, I started to stray from my meal plan.  The one thing I did know was that you needed to have protein with every meal, and this is where more problems arose (I should mention that my vaginal symptoms were still persisting).  To me protein without eating meat meant Tofu, veggie patties, and edamame.  I started eating these protein sources with every meal: organic hash browns and tofu for breakfast, veggie burgers and salad for lunch, edamame as a snack, tofu as a snack and stir fry with tofu for dinner.  When I like a meal, I tend to just eat it over and over. (I did have slight variations, but still ate a lot of tofu)

Well after months of still having pain, I started to go back to Rachel for more pelvic exams and urine tests....still nothing found.  Rachel thought that maybe I had Interstitial Cystitis, where you develop cysts in your bladder and certain foods can irritate them).  For this test, she put a catheter in my bladder and poured a solution in to see if there was a reaction... nope, no reaction!  So I was sent to have an ultrasound...

The ultrasound was the one of scariest experiences of my life. The technician who was doing my ultrasound kept making ominous faces and at the end of the session told me that my doctor and I would have to "come up with a plan".  However, she wouldn't tell me what was wrong.  I went home crying and thinking the worst thoughts possible.

Five days later, I was able to meet with my doctor to find out the ultrasound results.  She said that they didn't find anything abnormal, except that my uterine wall was abnormally thick. At this time, she wanted to do a biopsy to rule out endometrial cancer.  This was the worst pain I have experienced in my life! She cut out two samples from my uterus and I had to wait another week for the results.

Needless to say that was a long week!  The doctor called with the results that following week, and they were NEGATIVE....thank goodness!!  However, she thought that the soy in my diet (from the tofu, edamame and veggie burgers) had caused the increase in my uterine wall.  She said that the estrogen in soy could be causing all of my problems.

Soy was out!!

What changes have you made since finding the problem?

It has been about four months since my biopsy scare and I haven't had a piece of tofu since.  I have eliminated soy from my diet.

What improvements have you seen/felt?

I still have a day or two with pain, but for the most part I feel great!

What have you learned from the experience? About yourself? About your diet/lifestyle?

I have learned a lot from this experience.  I have learned that foods need to be eaten in moderation.  I tend to find one thing that works for me, and eat that same ingredient over and over. I definitely have eating ruts!

I have also learned the importance of not eating GMO foods, which include tofu.

How is your diet now and how do you feel?

My diet now consists of a ton of organic veggies, brown rice, quinoa, quinoa pasta, fruits, nuts, sprouted tortillas, and beans. I try to eat foods that have come out of the ground with little to no hormones or modifications.

I have also started eating chicken and eggs again.  I still don't believe that eating animals is morally the right thing for me to do.  However, it was becoming so difficult to eat out or plan meals with protein, so I added it back in. I only allow myself one meat source, and I am hoping to eliminate it from my diet, the proper way, in the future.

I probably eat about 6 times a day...breakfast, snack, lunch, snack, dinner, snack.  I stay away from breads and tend to eat my fruits in the morning.  I feel great now and look forward to eating :)

Also, this experience has made me realize how passionate I am about nutrition.  It is amazing how food can affect every part of your body and the way you feel.  I would love to be able to help others feel better, and am hoping to become a Nutrition Coach in the next few months.  This experience changed my life and the way I will always look at food.  I cannot wait to spread my message to people!

I also want to thank Rachel, the one doctor who thought that nutrition can make a difference in your health.  I cannot believe that it took two years for a doctor to ask me about my food intake....the most important thing that goes into your body?!

Thank you to every person who reads and shares my story. Although my symptoms were fairly embarrassing, I hope that I can help even one person through my experience.  That makes it all worth it :)

Where have I been?!!

You may or may not have noticed a considerable decline in my posting over the past couple of months and I must say, I've missed you!! :)

I guess you could say I'm in sort of a makeover stage. But actually, I don't think I'll ever stop working on my self. I don't ever want to settle on "good enough." I believe there are always things to learn and there's always room to grow.

So, here's where I've been in LIFE~

One of the reasons I have become increasingly busy (on top of the kids going back to school and the pace picking up at work) is because I have begun The Introduction Leader's Program with Landmark Education. I have been participating in this education for almost a year and a half and the best way that I can put it into words right now is that it has rocked my world! This education has burned up my regrets and sorrows from the past and cleared a new path for creation of whatever I desire. Anything is possible! It has fueled my fire in setting out to accomplish and fulfill all of the things that matter to me. I'm now looking at 6 months of self development and growth in this program and I'm so excited about the ME that will come out on the other side!

Here's where I've been in FITNESS~

I just noticed that I kind of fell of the wagon of sharing my LiveFit Trainer progress. Life got insanely busy, my schedule changed considerably and I totally fell off of my gym wagon (for a whole month! ouch!). I only made it through Phase 2, BUT I absolutely LOVED the progress that I made with even just the first two phases of that program. I'm pretty sure I will do those phases again in the future. Phase 3 became a little lengthy and complicated for the amount of time I was willing to spend in the gym. Also, since I wasn't following the diet that went along with the program, I really didn't feel that phase suited my goals. At any rate, I HIGHLY suggest Jamie's program if you're looking for a way to change it up and build some muscle. I found it to be highly effective (with or without the diet) and very well rounded. I'm certain that you'll gain both results and knowledge from this program.

So, what now?! Now, I'm jumping into week 3/4 of The Sweaty Betties 12-Week Lifting Program. I'm really hoping to get back the definition that I lost during my month off. Stay tuned! :)

And in case you didn't see yet, I was one of the winners chosen for the Inspiration & Perspiration workshop in Las Vegas next month!! (*My blog entry*) I can hardly wait to spend the weekend with the amazingly inspiring women that are putting this on. WHO ELSE will we be seeing there???

In FOOD (my favorite topic!) ~

Recently I've noticed an increase in my feeling tired. Yes, I'm insanely busy, but it just doesn't seem to match up with how often I feel fatigued. I sleep well, eat healthy and exercise consistently, so what could be wrong? My initial thought was to blame it on the caffeine, but even when I cut it out, it didn't seem to improve. So now, this preferred vegetarian is adding in some protein again (specifically, seafood) to see if that helps. I'm open to your thoughts on this topic as well! And yes, if the problem persists or becomes more concerning, I will see my doctor. :)

And last, but certainly not least... Heavenly Healthy is undergoing a makeover! I'm so excited because I have a great friend who is working with me on giving my site a new design. I have big plans for this page over the next year or so and our 'outfit' should be reflective of what's to come! Again, stay tuned! :)

Thanks for reading, supporting and sticking around during my crazy times! You're the best! :)

Healthfully yours,
~Mimi~

Life Worth Loving~

Lately my life has been a perfect reflection of all of the things I've been working so hard to create. I think it's so important to take the time to recognize, acknowledge and give thanks when things are going your way. If we only focus on the things that DON'T go our way (which can be an easy trap to fall in to), then we could miss out on the things that really matter - the GOOD stuff! So, here are a few things that I'm feeling really thankful for this evening, as well as reasons I feel naturally inclined and inspired to keep living Heavenly Healthy.

  • Seeing the healthy influence that we've had on our friends/family to improve their quality of life through healthy eating. This weekend as we spent time with some of our closest friends, it was brought to my attention that it has been through our example that some of them have been making positive changes in their kitchens/diets/lifestyles. Even so much as working toward becoming vegetarians!  If I am changing as little as ONE family's life by what I do, then I am one happy mama! I'm so proud of you, my friends, you know who you are! ;)

  • Meeting new friends (thank you FitFluential, Inc.!).. I had the pleasure of meeting a fellow ambassador today; the very lovely, sweet and inspiring Alison from Berry Happy Bodies. We did a beautiful 3 mile walk on the coast of Encinitas and chatted the entire time! It was a pleasure to meet you and I look forward to seeing you again soon!

  • I'm excited to share that last week I took my first step in the direction of bringing my passion to life. I have teamed up with The Conscious Cook and I'm thrilled to be working toward changing lives through healthy eating. Additionally, I am working on a program to assist in transforming peoples health, beginning in their kitchen!

I aim to wake up each morning with the thought that every day is a new possibility for creation. And if I don't wake with that thought, then I create it as the day goes on. It's not always easy, but it definitely is possible. This leaves me open to the unthinkable and unimaginable. You have to really believe that your dreams are possible if you want them to come alive!

Thank you all for reading and supporting my journey!!

Yours in health,
~Mimi~
